Smoked Raspberry Tea Pulled Pork

Original Recipe

This recipe assumes the use of a wood pellet grill/smoker.

Ingredients

9-10lbs Pork Shoulder (Bone-In or Boneless)
2 cups Raspberry Tea Marinade (see below)
1 cup1) Raspberry Chipotle Dry Rub2)
Raspberry Tea Marinade
2 cups (500ml) Raspberry Iced Tea3)
2 tsp.4) Onion Powder
1 tsp.5) Garlic Powder
1 tsp.6) Black Pepper
2 Tbsp. Honey
1 Tbsp. Raspberry Chipotle Dry Rub7)

Preparation

  1. Wash pork shoulder. Place in roasting pan or similar dish.
  2. Using a meat injector to inject marinade directly into the meat, distributing the marinade as evenly and thoroughly throughout the meat as possible. Refrigerate and allow to marinate for at least 2 hours; overnight is preferable.
  3. Remove pork shoulder from marinating vessel. Thoroughly cover the entire pork shoulder in dry rub; return to refrigerator an allow dry rub to infuse for at least 30 minutes.
  4. Prepare grill/smoker for a 200°F-250°F cook/smoke. Place the prepared pork shoulder directly on grill/smoker grid, central or high in the grill/smoker.
  5. Cook/smoke for 4 hours.
  6. Move the pork shoulder to a roasting pan, cover with aluminum foil, and continue cooking at 225°F-250°F for an additional 3-4 hours.

Measurement is approximate. Have more on hand, and use as much or as little as necessary to thoroughly coat the pork shoulder.

The dry rub used for this recipe is Louisiana Grill's Raspberry Chipotle rub. It is now discontinued; a similar raspberry flavoured rub should be substituted if unable to obtain Louisiana Grill Raspberry Chipotle rub.

The specific raspberry iced tea used for this recipe is Peace Tea Razzleberry; however, any raspberry flavoured iced tea will likely make an adequate substitute.
